On Rosh Hashanah, it is customary to bake round challahs representing the circles of life and the good year we hope will come upon us.
There are many ways to design beautiful round challahs, but here is a simple and stunning version - A crown-shaped challah that anyone can make.
Before baking, sprinkle a little almond, and when the challah comes out of the oven, brush it with a sweet honey glaze, for a particularly sweet year.
For the dough started:
3+3/4 cups white flour (525 g)
1 tbsp dry yeast (9 g)
¼ Cup White sugar (50 g)
¼ Cup vegetable Oil (60 ml)
1 Large Egg
1 tsp Salt
1 cup warm water
Egg wash
1 handful sliced almonds
How to make your festive Crown Challah:
1 Place the flour and yeast in a mixer bowl and mix with a spoon. Add the sugar, oil, egg, and salt. Add 3/4 cup of the water and mix with a kneading hook for a few minutes.
2 Gradually add more water, to get a uniform and soft dough, but not too sticky - one that will be comfortable to work with. Mix on medium for 5 minutes. Cover the bowl with cling film loosely and let it rise until doubled in volume.
3 Line a 28 cm diameter pan with baking paper, grease it well and place an oiled ring (8 cm in diameter) in the center of the pan
4 Divide the dough into 10 equal and evenly sized balls and place them inside the pan at equal distances from each other. Cover the mold with a towel or cling film and let rise until doubled in volume.
5 Preheat oven to 180 degrees. Gently brush the dough with the egg wash and sprinkle sliced almonds on top.
6 Bake for about 20 minutes until the dough is completely baked (if you want to measure with a thermometer, the challah should be no more than 93 degrees f. )
7 Mix the honey with the hot water and brush the challah with the honey glaze. Let the challah cool slightly and remove it from the pan.
